Adjust the Settings for your Live Chat Departments.

*Please note that this setting is only available in the Pro.

Navigate to Live Chat  Settings → Departments.

Choose a Default Department from the drop-down list.

If you want to allow Visitors to select a Department when initiating a Live Chat, then click the checkbox next to User Department Selection.

When done, click the Save Settings button.
